BAKED EGGS AND AVOCADO
If you’re like me, the mornings mean rushing around doing five-thousand different things! Getting the kids ready for school, making lunches, dropping the kids off, answering emails, taking phone calls, scheduling appointments, trying to get to the gym…ok I’m getting stressed out just thinking about it right now! I’m always looking for easy ways to feed my family with whole foods, good fats and a balance of protein and fiber.
For starters, you want to make sure you’re buying eggs from your local farmers market from farmers who let the chickens run around, don’t feed the corn or soy and they supplement with feed make sure it’s organic. After all you are what they ate! Eating eggs from the grocery store means these chickens were raised in less-than-ideal conditions. You will be consuming their stress hormones, antibiotics, pretty much you receive their life force. You want to eat happy eggs from happy chickens. You can tell when they are healthy, the shell is hard, the yolk is orange not yellow and it is amazing!
To have healthy blood sugar and maintain a healthy body weight you want to always balance out your protein with fiber though, so I would suggest adding a bowl of oatmeal or sautéed veggies to ensure you’re getting the healthiest breakfast possible. The best part is, you can make as many avocados and eggs as you want…so it’s an easy breakfast for the whole family. Let the oatmeal cook while the avocado is baking. Enough talking…lets get to cooking!

- Heat oven to 425 degrees Fahrenheit
- Cut the avocado in half and remove the pit.
- Take a spoon and scoop out a small amount of avocado from the the center, this is to ensure your egg will stay put in the avocado and not drip over the side. Don’t throw it away! Eat it!
- Place avocados in a baking pan and make sure they’re snug and don’t fall over.
- Crack an egg into the avocado pit. You can also crack the egg in a cup measure and pour in the yolk and egg whites. It’s totally up to you.
- Bake for around 15-20 minutes.
- Garnish with chives, salt, pepper, and serve! Delish! Healthy fats will keep you full longer and give you more brain power!
