Heat oven to 425 degrees Fahrenheit
Cut the avocado in half and remove the pit.
Take a spoon and scoop out a small amount of avocado from the the center, this is to ensure your egg will stay put in the avocado and not drip over the side. Don’t throw it away! Eat it!
Place avocados in a baking pan and make sure they’re snug and don’t fall over.
Crack an egg into the avocado pit. You can also crack the egg in a cup measure and pour in the yolk and egg whites. It’s totally up to you.
Bake for around 15-20 minutes.
Garnish with chives, salt, pepper, and serve! Delish! Healthy fats will keep you full longer and give you more brain power!
