SuperFood Power Green Salad
Okay, my birthday week is right after the holidays which means I am squeezing into my favorite jeans, haha! Nothing like needing the gym and no time to get there, right? When I’m feeling a little “fluffy,” I always look at balancing my diet with fiber-filled super green foods. Raw of course. I cooked broccoli this week, which meant that I had a few stalks left. I have made a great salad in the past using chopped broccoli stalk, kale and a homemade dressing but I decided to mix it up a bit this time.
I have included the recipe below. Serves four.
Salad:
1 bag Trader Joe’s Organic Power Greens which is kale and other greens (you can also substitute kale)
1 bag shredded brussel sprouts
4 organic broccoli stalks
3/4 cup dried cranberries
1/2 cup pumpkin or sunflower seeds or a combination of the two
Dressing: ( I don’t usually measure so adjust as needed)
4 Tbsp lemon infused olive oil (regular is fine)
4 Tbsp organic agave nectar
1 Tbsp poppy seeds
1 Tbsp and 1 tsp white balsamic vinegar (or your favorite flavor, get creative!)
1 Tbsp organic fresh squeezed lemon juice
3/8 Tsp salt (I used Sicilian salt with lemon but regular salt will work as well)
1/8 Tsp pepper
Blend the dressing with a submersion blender and it will get emulsified and yummy! Toss everything together and serve 4 people for dinner! If you want to you can add chicken if you are needing more protein.
Raw foods can always bring back some balance from a naughty weekend diet or feed your family on meatless Monday!
Raw can be delicious and filling too and my kids love this salad!

hey there hot stuff! I always make my salad dressings and right now my new kick is:
olive oil
mustard
any kind of citrus (squeeze an orange, lemon or lime)
salt and pepper
whisk it up and you’re done – quick, easy, delicious and healthy!
