I have listed below how your first week will look like. There should be plenty of pre-planning to make sure you have sufficient produce at your house, as you will be eating lots of vegetables during detox. And of course, organic is best when possible but it’s better to eat a conventionally raised apple than a bag of chips. So eat the apple but wash it with a fruit and veggie cleanse.
I packed all the food you see below for my husband while he was driving 10 hours and out of town for an unexpected trip for a couple of days. As long as you can bring a cooler, or have access to purchase fresh vegetables, it’s all good! Fruit and veggie bowls for snacks, vegetable soup for lunch, kale chips, apples, kiwi, boiled eggs and cooked greens for breakfast. That’s a Garden of Eating right there!

It is very important you only eat approved foods. This week is only 7 days. You can do less but I have found a week to be magical. You can do anything for 7 days. Think about why you are doing this and the reward of how good you will feel and look. Below is a beautiful breakfast of organic steamed beets I picked up at Costco, steamed carrots with fresh grapefruit and pastured eggs sautéed with spinach, green onions, cayenne, basil, thyme, chives, parsley, and a little detox tea. It looks like my Western omelet was happy to see me! A Cajun spiced omelet with onion, red pepper, portobello mushrooms, cherry tomatoes, spinach, and herbs.
Food prep for a detox week means lots of greens! Sauté a giant red onion in a couple of tablespoons of olive oil until soft then add all the stems of all greens chopped small and about 10 or 15 cloves of garlic smashed. Then add chopped greens, whatever mix you like. I added 2 bunches kale and 5 bundles of swiss chard plus some Chinese greens and my favorite: a plastic bag full of collard greens. I seasoned with cayenne. Makes about 15 cups cooked greens.
I sometimes need to get creative with 21-day detox breakfasts, really out of boredom as you can see here with this one. I wasn’t sure how it was going to turn out but we are both pleasantly surprised! It’s a lovely combination of sweet and spicy! Steamed broccolini sautéed with beets, salsa, spinach, fresh cilantro, southwest seasoning and hot sauce with eggs over medium!
