WHITE & DARK CHOCOLATE POMEGRANATE BARK
Confession: I am an addict, no like seriously, a chocoholic. Not just any chocolate but dark chocolate.
My kids even eat it, regularly. Because you know I make something sweet, it has chocolate in it. I can say no to cupcakes, candy, pies… you name it! But chocolate and I have been having an affair for quite some time. And its not just any chocolate, I prefer 70% dark for health reasons. Since I’m doing the cooking, my family has no idea there’s a difference between dark, white or milk chocolate…YET. They are only 4 and 7, so they eat whatever I make and I think dark is better for you! My husband hated dark chocolate when he met me. He only ate milk chocolate. You can guess how long that lasted. He’s been reformed and now it’s the opposite! Neither of us care for white chocolate but this is something special for the princess in the house. Skylah was begging for Christmas treats with snow on them and I was pleasantly shocked that I really like it too!
So…here’s the story of the recipe for the White and Dark Chocolate Pomegranate Bark. I had 6 giant pomegranates from Costco and was down to one. We’ve been eating them as a side dish, in Pomegranate Guacamole, over ice cream etc and I had to do something with it that was different and flavorful. So when they started begging for chocolate I was going to make my usual dark chocolate bark. But, I couldn’t let all the beautiful fresh pomegranate seeds get lost in a sea of blackness! It’s Christmas! “Let it snow, let it snow!” So off to Trader Joe’s for some white chocolate. I should write this date down. I broke the rules. I’ve never liked, nor intended to cook with white chocolate or as my son says vanilla chocolate. Ha ha, he is so darn cute! I was hoping I wouldn’t eat it. Fat chance! No pun intended!
This recipe is so easy to make and so beautiful when done. The final result was amazing! The pomegranates added the perfect amount of freshness with a tangy crunch that accentuated both the chocolates. If you want to use fresh pomegranates, read here to learn how easy it is to seed them. It’s very easy to wrap these up in a colorful packaging since they make great gifts for neighbors, teachers, friends co-workers, and family. It’s super easy to make and even easier to eat. YUM! Ingredients
Method
- Use a double broiler if you have one or use a pot of water with metal bowl on top.
- Bring water to a boil then lower heat to low so it is steaming.
- Break apart chocolate and place small pieces in metal over low heat.
- Stir constantly until melted with a rubber spatula being careful not to burn the chocolate
- Pour melted chocolate on parchment or wax paper on metal baking tray smooth out with spatula until it's a thin layer.
- Repeat melting process for white chocolate in a clean bowl.
- Drizzle white chocolate over dark chocolate in thin layers.
- Sprinkle pomegranate seeds all across bark then press into chocolate.
- Place in refrigerator for a of couple hours or overnight until set.
- "Break" apart large bark with hands, aiming for large triangular pieces
