Stuffed Poblanos Peppers OMG Easy!!!!!!!

IMG_1369 So I’ll be honest, I like international food better than American food and especially healthy, delicious fresh food.

One of my friends from Mexico made stuffed Poblano peppers for me once and of course they were to die for, however low calorie they were not (breaded and fried.)

So I set out to make a healthier, lower glycemic version of the same.  Especially when my awesome neighbor keeps bringing me beautiful fresh tomatoes and jalape ±os.

IMG_1371Now most of my friends know with two little ones I sometimes make up recipes and hope for the best because I don’t have time to look it up and go to the store and get what’s missing so I just work with what I have!  Boy was this one out of this world!  I might be forgetting an ingredient but I make stuff different every time.  I promise you can’t screw this one up unless you don’t add enough spices.

I took a ground beef from a local farmer with no hormones, grass fed etc and saut ©ed it with onions, peppers, chilis, jalape ±os, fresh garlic and tomatoes.  Tons of spices were thrown in like cumin, coriander, sweet paprika, pink salt, ground pepper, and a dash of raw cocoa powder to deepen the flavor.

After cooked I add raisins and sliced almonds for crunch and a little sweetness plus almonds are an alkaline protein unlike animal protein which is acidic and raisins are a great source of anti-oxidants.

I also made an enchilada type sauce.  I pureed (but leave a little texture) together tomatoes, onions, garlic, cilantro, cumin, jalapenos, a dash of lime juice, pink salt and a little agave to sweeten and balance the heat then poured around and a little on top of the stuffed poblano peppers.

Finish it off with your favorite cheese.  I used dubliner because (you guessed it) that’s what I had in the fridge.  I like dubliner because it comes from Irish grass-fed cows!  It’s a light mild cheddar and you can pick it up at Costco!  I love nabbing some of my favorites at a local Costco, they carry quit a bit of organics these days!

As you can see I’m not stingy with the cheese part!  (Hey there’s no bread!)

Bake in the oven til golden brown!

The little toddlers gobbled it up and it’s even better left over and can totally be prepared a head of time and thrown in the oven just before company arrives! (It’s really good with some crusty French bread or Naan warmed to serve on the side.  Hope you enjoy, my family sure did! Que Rico!
