Cranberry Turkey Wrap

If you’re like me, you always have leftover turkey after Thanksgiving or Christmas. Of course this is great year round even with deli style turkey or even chicken.  It’s very easy to make and give’s your lunch or dinner a little kick!

Ingredients:

9″ fresh soft tortilla shells

shredded or chopped turkey or chicken

cranberry salsa (or cranberry sauce)

fresh onion and yellow (or red) pepper

fresh cilantro

fresh grated cheese (I use dubliner because it’s from grass fed cows in Ireland! 🙂

optional:

cumin, paprika or smoke seasoning, garlic, granulated or fresh

salad of your choice on the side:

I used pea shoots and kumato brown tomatoes which are sweet and delicous with a little cilantro dressing on top.

Pre cook the tortillas if they are fresh. Costco has a great fresh tortilla and you can fresh half the package to use later.  After cooking, spread with grated cheese.IMG_5486

 

Saute your onion and peppers with garlic until the onions are clear.

Then add turkey and spices.IMG_5492IMG_5495

Top the cheese with the turkey mixture. IMG_5498

Then fold and cook on medium low until cheese is melted and tortilla is crispy.IMG_5506

Assemble your salad or fresh veggies on the side with dressing of your choice. Enjoy!IMG_5507Make lunch more fun, healthy and flavorful!

    Costco! Really most grocery stores carry it. It’s a white mild cheddar from Irish grass fed cows!
