Healthy Chocolate Chip Peanut Butter Bread
Can the word healthy and chocolate chip reside in the same sentence? Well if it’s wheat free, gluten free and dairy free, I think so! This healthy chocolate chip peanut butter bread fits the bill. Although we have no allergies in my family, I am conscious of the dairy and wheat issues in the U.S. particularly with the “wheat belly.” We’ll talk about that hot topic later! With that being said, I choose to limit wheat if I can, since I know it is (GMO) Genetically Modified in the U.S. and not what it was created to be anymore.
We’ve been using alternate flours like coconut and almond flour. In this recipe, I wanted to experiment with peanut butter (you can also use almond or other butters) because my son is a peanut butter addict. If there was a day that went by that he didn’t request a peanut butter and jelly sandwich I would be shocked! Just remember when you are buying peanut butter to read labels. I really prefer the fresh peanut butter you can make at home or at healthy food stores like Whole Foods or Earth Fare, with as few ingredients as possible (just ground nuts is ideal). I at least will get organic, so I know there are no hydrogenated oils in it.
I also try to avoid processed sugar and eat whole foods as much as possible. So this recipe contains maple syrup instead of granulated sugar. If you are worried about glycemic index you should be fine substituting agave syrup instead.
When I made this bread for my son he was sleeping because I just ran out of time that day to accomplish everything I wanted to do. It went in the oven before they went bed and when they both walked into the kitchen in jammies after brushing their teeth, both inhaled deeply and asked “Mommy, what in the world is that yummy smell?” The aroma filling the house was so incredibly warm and delicious that I couldn’t help myself when it came out of the oven at 10pm!!! I’m not even a peanut butter fan, but wow, it was so good with a little grass fed butter pat on the warm bread! I couldn’t even get a picture before several slices were already missing!
We paired it with orange juice and scrambled eggs for breakfast. How delicious and nutritious is that? Besides I got the “Mom of the year” award this morning and a giant smile from my sweet baby boy. Then he asked for more after school as a snack. And at bedtime, I noticed it look like a rabbit had taken a big chunk out of one side, lol. When I asked who made the dent, Tristan replied, “um mom I couldn’t help myself.” Now that kind of appreciation is worth staying up late to cook for my munchkins.
