Breakfast Turkey Enchiladas
I love having a breakfast dish that you can put together for company and bake the morning of that is savory since not everyone wants something sweet.
Or if you have a family like I do and like to have leftovers for a couple days, this recipe is excellent to make Sunday and have Monday morning plus it adds vegetables to your morning and kids love it and will never know you stuffed a bunch of kale in there!
It’s very easy to make and you probably already have most ingredients in your fridge!
- 2 cups diced cooked turkey (or ham)
- 1 bell pepper, diced (any color)
- 8 green onions, finely sliced
- 2 cups shredded cheddar cheese
- 1/2 cup feta cheese
- 1 1/2 cups frozen kale (or fresh, I keep some in the freezer so I always have it for soups and such)
- 10 eight-inch whole wheat tortillas (or flour or flavored)
- 6 organic eggs
- 2 cups (473 ml) organic half-and-half
- 1 tablespoon whole wheat flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Prepare Baking Dish
Lightly spray 13 —9-inch (3-quart) glass baking dish with cooking spray.
In large bowl, stir together turkey, bell pepper, kale, feta, green onions and 1 cup of the cheese.
Place 1/3 cup of the turkey mixture down the center of each tortilla; roll up and place seam side down in baking dish.
Pour the mixture evenly over the wraps and top with remaining cup of cheese.As you can see I put almost all the cheese inside then realized I didn’t have any to put on top! Also make sure you roll them tight so they are submerged in egg. They were delicious and healthy and perfect for when you have company!
Mom said eat your greens, one of the best ways to keep your weight down is to eat them in the morning. Fiber and protein. But hey she didn’t say you can’t put a little cheese on the top too!
