Turkey Pot Pie

It’s the day after Christmas and if you’re like most people, you probably had turkey for Christmas dinner? Got leftovers? Well, you are in luck because the post holiday turkey recipes just keep on coming. Here is a recipe for an amazing pot pie. “Banquet” ain’t got nothin’ on this! Ha!IMG_5547

Pie crust from the freezer at Trader Joe’s (because I just have no desire to make pie crust.  I’d much rather chop veggies instead!)  This recipe can be modified any way you like!IMG_5553

2 Tablespoons butter

1 onion, chopped

2 stalks celery, chopped

2 carrots, chopped

1 cup shredded broccoli stalk

1/2 cup corn

1/2 cup frozen peas (I used edamame bc I was out of peas)

4 tablespoons flour

4 cups turkey stock or chicken broth ( add more if needed)

1 tsp poultry seasoning

1 tsp sage

1 tsp rosemary

1 tsp thyme

2 potatoes, diced ( leave the skin on)

2 Tablespoons cream

2 cups shredded or chopped turkey

2 tablespoons chopped parsley (I added green onion too because I had it but not necessary)

2 prepared pie crust that you roll out

1 egg lightly beaten

Directions
Preheat oven to 350 degrees F.

Melt butter in saucepan and cook chopped onion until tender. Stir in celery, broccoli stalk and carrots and cook for 2 minutes. Stir in flour and cook for 2 minutes. Add chicken stock and bring to a simmer. Add potatoes and edamame and simmer until tender. Stir in turkey, parsley and corn. Pour mixture into casserole. Top with pie crust and brush with egg. Bake for 30 minutes until crust is golden.  Adjust time depending on whether or not you use a large or small pie pans.

Shredded Broccoli stalk (just because I had it and it’s added fiber to lower the glycemic index of the pie crust and it tastes good!)IMG_5564

Saute the onion, carrot, celery and broccoli stalk in a little olive oil and sprinkle of salt and pepper.IMG_5565

Cut up the potatoes and boil in chicken broth.IMG_5569

Add flour to the sauteed veggies to create a thicker base.  Make sure to cook the flour so you don’t taste it in your pie.IMG_5570

Add turkey and enough cream to desired consistency.  I used a couple tablespoons.IMG_5577 IMG_5579

Put the mixture into the baking dishes then top with pie crust, cut edges and pinch with a fork.  Then brush with egg white mixture.

And VOILA! Your delicious meal awaits.

Comfort food, ah…can be healthy too!  Just load it with veggies!
