Garden Fresh Herbs All Year!

herbs in olive oilWhat to do with the bountiful herb garden that is overflowing outside??  I don’t know about you but with two little ones, time to make gourmet food comes at a price.  Long gone are the days of having a glass of wine while cooking.  Instead it’s peeling a 2 year old off my leg, finding Caillou on NetFlicks before someone has a panic attack, while trying not to burn my carefully thought out 4 course meal… that I’m sure half of will get thrown on the floor by the little Munchkin!

Answer to my pickle:  Prepare ahead of time.

Besides chopping up your veggies ahead of time or buying pre-cut meats, get creative in the kitchen with fresh herbs that are pre-packaged by you!

A simple tip for cooking meat and veggies that taste delicious?  Fill an ice cube tray with fresh herbs in each section and fill with olive oil.  Then put them in the freezer.  You can even add garlic, chili’s and other spices to create your favorite flavors.  Once they firm up, you’ll have a delicious little cube that’s easy to toss into your frying pan or pot and that will give you gourmet flavor instantly all year long!

If you didn’t this year you should next year…plant a small section (preferably in an area that has irrigation, because if like me you’ll forget to water) of your favorite herbs.  It makes cooking healthier, taste better, and it is a rewarding addition to any lifestyle.  Hey, it took me at least 5 years of having “herb garden” on my goal statement before I finally made it happen.  It is pretty ridiculous that it took me that long!  If you love cooking, you will love having fresh herbs at your fingertips, whether they are fresh picked today or put into ice cubes to use over the winter…

Love and herbs,

Laura
