Method
- Peel the papaya and rinse with running water to remove acid.
- Remove seeds and shred with a grater or food processor. Set aside.
- Place the garlic clove and chilies in a mortar and mash with a pestle until crushed or throw in a processor or chop. I like the mortar because it feels like what I would do in Thailand.
- Add the fish sauce, salt and stir, then add the papaya in a large bowl and serve cold with fresh cilantro and ground roasted peanuts on top.
