THAI PAPAYA SALAD

Ingredients
  

  • 1 Medium dark Green Papaya found in Asian or International Grocery Stores
  • 4 to 5 Garlic Cloves
  • 5 or 6 Thai Chilies
  • 2 Vine Ripened Tomatoes cut into wedges
  • 1/2 Cup Chopped Green Beans in 1 in pieces Long Beans from International Market are preferred
  • 3 tablespoons Fish Sauce international section of grocery store
  • 1/2 teaspoon pink or sea salt optional
  • 1/4 cup fresh lime juice or more for your preference
  • handful chopped cilantro for garnish
  • ground roasted peanuts on top

Method
 

  1. Peel the papaya and rinse with running water to remove acid.
  2. Remove seeds and shred with a grater or food processor. Set aside.
  3. Place the garlic clove and chilies in a mortar and mash with a pestle until crushed or throw in a processor or chop. I like the mortar because it feels like what I would do in Thailand.
  4. Add the fish sauce, salt and stir, then add the papaya in a large bowl and serve cold with fresh cilantro and ground roasted peanuts on top.
