Superfood Cookie Monster Bites

Ingredients
  

  • 1 cup gluten free rolled oats
  • 1 cup raw almonds or nut of choice
  • 10 pitted medjool dates
  • 1/3 cup water
  • 1/3 cup unsweetened coconut
  • 1/3 cup acai berries or raisins, cranberries, etc
  • 1/3 cup mini dark chocolate chips I use Good Life

Method
 

  1. Combine the almonds and oats in a food processor and blend into a fine powder.
  2. Add dates and keep blending
  3. Add a little bit of water at a time to form a paste-like dough
  4. Roll the dough into balls and place on a lined sheet
  5. Pop in the fridge for it to set and firm a little bit.
  6. Don't eat just one!
