Salted Rosemary Haystacks

Ingredients
  

  • 1 pound plus bar 50% or 72% dark chocolate from Trader Joe's
  • 1 cup roasted peanuts
  • 1 cup chow mein noodles
  • 3/4 cup organic cranberries
  • 1/2 tsp. cayenne optional
  • 3/4 cup roasted salted pumpkin seeds
  • dash of rosemary salt on top of each cluster

Method
 

  1. Bring a pot of water to boil, put a metal bowl on top and turn heat to low. Or you can use a fancy double boiler though a pot works just great.
  2. Break the chocolate in pieces and slowly stir as it melts with a rubber spatula.
  3. Once all the chocolate is melted, add all the ingredients except the rosemary salt.
  4. Using a spoon or small meatball size scoop so your haystacks are all approximately the same size onto parchment paper or a silicone matte to cool. Put in the fridge for a couple hours or overnight until firm.
