Quick Naan Pizza

Looking for something amazing to have for a quick lunch at home? Welcome to Naan Bread world! I keep these babies in my freezer for quick kid pizzas, to have for breakfast or with Indian food. They are handy, thaw quickly and taste awesome! Plus, you can pick them up at al local Costco or grocery store. They are made the old fashioned way with very little ingredients. It’s mostly an egg base for added protein. Hey, if you are a busy mom or just busy, it makes pizza fast and pizza is great anytime, right?

You can make it any way you like, my usual is whatever I have to work with in the fridge. Today, I wanted to make sure it had lots of healthy ingredients so I sautéed an organic deep green blend called ZEN that has mix of asian greens, baby spinach and baby kale. It’s great for sauté or salad and perfect for pizza. You can find it at local grocery stores.

First, I sautéed thin sliced onions until clear in a cast iron pan with a little olive oil. Since this takes a couple minutes, start it first. Once the onion is caramelized, then added the green mix until wilted, then a grassfed chopped local ham. This mixture can wait until you are ready to layer.

The first layer is whatever cheese you have in stock. Sliced monterey jack was all I had so I laid that on the naan first, then added some thin sliced tomatoes from my mini garden. For flavor I sprinkled on a pizza spice blend and spicy garlic salt. Actually I added the spices a couple times between layers.

Next layer the onion/greens/ham mixture with a healthy dose of grated parmesan or romano on top and pop in your toaster oven. I have a little mini baking stone that I like to use for pizza in my toaster oven. After the cheese is melted you are ready to chow!

In my little herb garden is fresh basil so I topped it with a chiffonade and sometimes will add a dash of chili oil made with olive oil.

Nom, Nom, and wallah, husband is so happy he will do anything you have on the honey do list! He couldn’t stop telling me how much he loves it when I am home and cooking! Ah the joy of people who love your food as much as you!

Now go get some Naan for the next time you feel like a little pizza and need to clean out your fridge!
