Superfood Healthy Breakfast Oatmeal Cookies

So I’m refusing to buy groceries right now. I’m leaving the country for a month and attempting to figure out how to make something out of whatever I’ve got. Now, I have had to keep fresh stuff in stock but I’m cooking through the freezer and cabinet. This has been a great way to experiment and come up with new healthy eating! I keep a lot of pantry items in my freezer to keep them fresh like flax seed, hemp seed and chia seeds to throw into salads, pancakes, yogurt and dressings to add more protein and fiber. Let’s face it, I like to crowd my food with flavor and healthy “stuff.” It’s a habit or “addiction” if you will but I think I’m making smart kids as a result. They certain should grow up to be foodies at the rate I’m giving them fish salad on gorgonzola crackers or smoked salmon and spinach scrambled eggs for breakfast with these little breakfast cookies. You will feel absolutely no guilt eating these bad boys for breakfast, snack or dessert. Full of protein and fiber and tons of nutrition.

I’m always looking for a way to make snacks for the kids that don’t include sugar or junk and are full of fiber and protein. This cookie is not really a cookie but that’s what we call it when it goes in the lunch box. “LOOK, you’re having cookies for lunch today!! Yay you!”

Let’s hope they like “healthy” because these are not very sweet though you can make them sweeter. This recipe is easily modified as I was making it, I was dumping more stuff in, so experiment away! They are super easy to make and most of the items you probably already have! I hope you enjoy this little indulgence as much as we did…
