Nothing smells more like home than muffins baking in the oven. I still have those memories of my mom baking all kinds of healthy homemade snacks. We never had store bought cupcakes or muffins. We would come home from school and the aroma of vanilla and fresh baked bread filled the air. There is something about that warm smell that makes you feel the love of your mother making something special for you. I hope my children remember how they loved their mom’s cooking when they grow up and begin cooking for their families. I truly believe food is an expression of love. You can surely taste the love when it was made with it.

A perfect breakfast has protein, fiber, and vitamins. It is also quick when you are getting up at 6 or 6:30 am. I love making a morning bread on Sundays for the week since my kids never fight me on a muffin. In fact, they ask for muffins religiously. Any leftovers do well in lunch boxes for school or work, which is a plus.

Sunrise Muffins with carrots and coconut are loaded with fiber and nutrients and they gobble them up anytime of the day! You can make it a warm and healthy breakfast with added protein and fiber, like a half a grapefruit and a soft boiled egg. I’ve even added sautéed asparagus to balance my blood sugar and help maintain weight.
